Hi, Sweet Friends,

I’m all in for Taco Tuesday! This is a taco salad recipe flip for our family and we are loving it!

It’s an easy fix to make. Just layer up the ingredients and you’re done! It really is tasty and simple.

This recipe serves 4 to 6. It is a perfect swap out for Taco Tuesday! It is a taco flavored salad. You can remove the Beef if you want Vegetarian, or remove the tortilla chips if you want Keto. As shown in the pictures above, make your salad as small or large as you want.

INGREDIENTS:

  • 1.5 lbs Lean Hamburger
  • 1 can Refried Beans
  • 1 pkg Taco Seasoning (Heat adjusted by preference)
  • 1/4 cup water
  • 1 bag Tortilla Chips
  • 1 head Iceberg Lettuce, chopped
  • 4 Green Onions, sliced
  • 2 Cups Shredded Mexican Blend Cheese (Bagged blend or Cheddar Cheese)
  • 1 Can Sliced Black Olives, drained and sliced
  • 1 Pkg Cherry Tomatoes, halved or 2 large Tomatoes, diced
  • 1 Container Sour Cream
  • Guacamole
  • Salsa

Here is the link to the hack for cutting Cherry Tomatoes! It is simple to do and saves 90% of the time to cut them one by one! You can also use this technique for cutting olives in half.

Directions:

  • Start by cooking the hamburger in a skillet on medium. Break up the hamburger with a spatula into small pieces and cook it until it is all browned.
  • Open the can of refried beans and pour them into a saucepan. Cook on medium until they have softened and are warmed up. Stirring occasionally helps to keep them from sticking on the bottom of the pan. About 10-15 minutes.
  • Pour off the grease from the hamburger by draining it into a colander that is sitting in bowl. Let the meat drain a bit before adding it back to the skillet.
  • Add the meat to the skillet. Add the taco seasoning and water to the meat and stir to combine.
  • Let the meat mixture cook for 10mins, Turn down the heat on the beans to low and stir occasionally.
  • Chop the lettuce. Slice the green onions. Slice the olives and the tomatoes. Put each vegetable in a separate bowl. Stir the meat mixture and turn off the heat.
  • Stirring the beans also. And remove them from the heat. Turn off the heat.
  • Make the taco salad’s for everyone or let them have fun making their own!

My example:

  • Lettuce on the plate
  • Add chips broken into pieces
  • Add refried beans and meat
  • Add cheese, onions, olives, and tomatoes
  • Add salsa, guacamole, and top with sour cream
